AU FOOD Expert in Danish Fruits and Vegetables Joins the Think and Action Forum ’Madtanken’

Professor Hanne Lakkenborg Kristensen from AU FOOD joined as a new member of the Danish Think and Action Forum ’Madtanken’ from February 2026.

Professor Hanne Lakkenborg Kristensen from AU FOOD has joined the Danish Think and Action Forum ‘Madtanken’ as a new member from February 2026. With her expertise in fruit and vegetable production, she brings a strong research perspective to the forum’s work on strengthening Danish horticulture.

Hanne Lakkenborg Kristensen will as professor at the Department of Food Science at Aarhus University contribute extensive knowledge of sustainable cropping systems, nitrogen efficiency, regenerative practices, and the role of research and academic education in the the horticultural sector.

Her participation strengthens the connection between research and impact in the Danish fruit and vegetable industry. In particular, she brings a focus on how scientific knowledge and academic education can support innovation, consultancy expertise, and long-term development in the sector. Her involvement also aligns with the brand new research strategy at the Department of Food Science, AU FOOD, where strengthening collaborations with key stakeholders in horticulture is an important priority.

About Madtanken

Madtanken is a Danish Think and Action Forum that brings together key actors from across the horticulture sector and the value chain to fruit and vegetable consumption, including producers, food service, industry, public and NGO organizations, as well as educations and knowledge institutions. The forum works to identify opportunities and concrete actions that can strengthen Danish production and consumption of fruits and vegetables.

One of the forum’s long-term ambitions is that 50% of the fruits and vegetables consumed in Denmark should be produced nationally by 2050. Achieving this goal would contribute to several important societal priorities, including improved public health, access to tasty and nutritious food, increased sustainability, and support for the green transition. It also relates to broader issues such as food security, local value chains, and strengthening Danish food culture.

By bringing together expertise from across the sector, Madtanken aims to support initiatives that can help expand Danish horticultural production while ensuring that it develops in a sustainable and resilient way.

Strengthening the link between research and sector development

With her appointment, Hanne Lakkenborg Kristensen adds a strong academic perspective to the forum’s work. Her research focuses on sustainable production of fruits and vegetables, nutrient management and soil fertility, and improving the efficiency and environmental performance of horticultural systems. 

At the same time, the collaboration provides valuable opportunities to connect research with real-world challenges and needs within the horticulture sector while developing solutions that can support a more sustainable and resilient food system.
